If you are looking for a great packed lunch recipe, here’s one for you. These are mini meatballs with mixed vegetables in mushroom sauce. This is very quick and easy to make (aside from the meatballs which may take a little time).
You can use frozen meatballs or do them from scratch. Saute chopped onions and garlic in a little oil. Add a pack of mixed frozen vegetables. Add chopped mushrooms too if you like. Add the cooked meatballs and one small can of mushroom soup. Simmer. Season to taste. Enjoy for dinner and pack the leftovers for the kids and/or hubby the next day to enjoy for lunch.
